The Ginja Snap is a labor of love --- it's a mission, not a business; a mitzvah, not a profit-making enterprise. Most of all it is an effort to return to the partnership spirit in which herbal remedies were once gathered, crafted and shared by folk in their community.
Nevertheless it takes a lot to produce one Ginja Snap. Equipment, seed, soil, organic fertilizers and disease and biological pest controls all have their costs, as do the organic spices, eggs, flour, fruits and other quality ingredients.
In response to repeated requests from biscuit enthusiasts, the Night Kitchen Bakery has created this site to make it easy for friends to help offset the non-labor costs of the materials, supplies and ingredients that go into every Ginja Snap.
